How do I win spin rewards? 

Upon completing achievements in "My Achievements" you win spin rewards. When you complete an achievement, you collect a trophy. Behind some of the trophies you can win spin rewards that are randomly hidden behind them.

What happens to all the rewards hidden behind the old trophies? 

Previous rewards behind the old trophies have now been replaced with the new "The Wheel of Jackpots" feature that has become available to you from today.
